mmmmmm cornflake biscuits


Simple yet tasty. Cornflake biscuits. Though the recipe is surprisingly hard to find - it's not even on the Kellogs site. That is however until you finally track a copy down, head off to the local to purchase said cornflakes and take a look at the side of the box! The recipe. Of course.

So for the record here it is:

2 cups flour
1/2 teaspoon baking powder
250 grams of butter
1 cup of sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups of cornflakes

Preheat the oven to 180 degrees C. Cream the butter and sugar until pale and fluffy. Mix in the eggs and vanilla. Add the flour, baking powder and mix. Then fold in the cornflakes.
Spoon onto a baking sheet (they will spread) and bake for 10 mins or until golden.

Yum yum. I have also had them with choc chips as well as cornflakes, though couldn't justify that just before easter.
